These crocks are handmade in Germany and then kiln-fired at 2200 degrees Fahrenheit. They are waterproof, food safe, and sanitary because the high temperature at which they are fired makes them very hard. Like any good ceramic, they are watertight with an impenetrable finish. The brown glaze is added for appearance, not to seal the crock. Because the glaze is hand-applied and the crocks are hand-thrown, there are often imperfections in the finish where the lighter tan of the ceramic shows through the dark brown glaze. These imperfections do not affect the performance.

Discover one of the oldest, easiest and healthiest ways to preserve food! Natural lactic acid fermentation allows vegetables to retain more vitamins and minerals than other methods. A German company has improved upon the traditional fermenting pots once used throughout Europe. Their newly designed crocks can be kept in a cool place for months, letting the vegetables inside ferment naturally.
When the patented gutter around the rim is filled with water and the heavy lid placed on top, an air-tight seal forms to protect food from air and decay. (The gutter must be occasionally refilled as water evaporates.)
The entire crock has a lead-free, food-safe glaze that will not retain foods' flavors and makes cleanup easy. Each comes with two semicircular weight stones designed to rest on top of food and create pressure needed for proper fermentation.
Well-made, nearly indestructible crocks are designed for making sizable batches of sauerkraut or preserving food for a large family or emergencies. "I purchased the 15 liter crock, and just love it!! There is no need to daily clear the scum off the top of the fermenting kraut (kahm). Just make sure the water in the lid grove is maintained and don't open for 2 weeks. Kraut, Kimchee whatever you ferment comes out perfect. I also recommend the Caldwell's Starter Culture. One thing I would like to see though is that the bricks that are placed on top of the kraut were glazed. If you make something like Kimchee the unglazed bricks pick up and hold that odor. "

"These crocks are wonderful especially for the price. They work perfectly returning to you perfectly fermented cabbage in about four weeks time. I love the lid system as it cuts down on maintenance of the sauerkraut. After using once I love it so much I bought 3 more in different sizes.
The only thing that was a bit frustrating was the opening even on the 20L is to small to fit a med. lg. whole head through the opening to ferment whole heads so I had to take off about 3-4 layers of leaf for the head to fit through the opening. No big deal though, these crocks are worth getting.
