Adding a variety of cookies to your holiday baking gives your loved ones an array of sweet choices. Try this classic recipe for butterscotch cookies. (Helpful Hint: Just make sure you leave time for the dough to chill!)
Butterscotch Roll Cookies

- 3 C. brown sugar
- 3 C. white sugar
- 4 eggs
- 1 lb. shortening
- 1 tsp. salt
- 12 C. flour
- 4 tsp. baking powder
- 3 tsp. soda dissolved in 1 C. warm water
- 1 T. vanilla
Cream shortening, sugar, eggs, salt in large bowl. Add dry ingredients – alternating with water. Beat until stiff enough to work into flour. Roll by hand into logs. Wrap rolls in waxed paper or foil. Chill. Slice into 1/4″ slices. Bake at 400°F about 10 minutes. Makes 8 dozen.
