A warm slice of homemade of pie right out of the oven…well, there’s nothing quite as comforting and delicious.

In celebration of Pi Day (okay, not exactly Pie Day but close enough) and with Easter right around the corner, we’re sharing with you a couple pie recipes from our cookbook, The Sapphire Cookbook Collection.

Peach Custard Pie

Bring on the peaches!

  • Total Time: 1 hour 5 minutes

Ingredients

Scale
  • 1 can peaches (32 oz), sliced (drained)
  • 1 can evaporated milk
  • 3 T. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 pie crust

Instructions

  1. Place peaches on bottom of 9″ deep dish pie shell.
  2. Mix together milk, sugar, eggs and vanilla. Pour into pie shell over peaches.
  3. Bake at 450°F for 15 minutes, then bake at 350°F 40 to 50 minutes.

Peanut Butter Pie

Looking for something sweet and smooth? Then this is your pie.

  • Total Time: 15 minutes

Ingredients

Units Scale
  • 3 oz. cream cheese
  • 3/4 C. powdered sugar
  • 1/2 C. peanut butter
  • 9 oz. Cool Whip

Instructions

  1. Blend cream cheese, powdered sugar and peanut butter well. Add Cool Whip and blend well. 
  2. Put mixture into a chocolate pie shell. Top with chocolate shavings.

No-Roll Pie Crust

  • Total Time: 20 minutes

Ingredients

Scale
  • 11/2 C. flour
  • 2 T. sugar
  • 1/2 tsp. salt
  • 1/2 C. oil
  • 2 T. milk

Instructions

Mix and press into pie pan. Bake at 400°F until nicely golden brown.

My husband loves peanut butter. I will make the peanut butter pie because he also loves pie!

what size can of peaches? I’m guessing 32 oz or close to that

In the peach pie recipe, in the picture, there is a top crust on the pie. In the recipe it only says 1 pie crust. Which is correct? If there is a supposed to be a top crust, shouldn’t the recipe say 2 pie crusts? I’m sort of confused.

This pie crust recipe is the best! It is heart healthy and my cardiologist approves it. It is easily to make, can freeze or refrigerate it. Great to make a Paper Bag Apple Pie ahead, freeze it and take it from the freezer to the oven. Be sure to put the whole pie in a grocery size paper bag. Crust and filling are great!
Have made pies using this recipe.???

The recipe is one crust but you can make a top if you want to. I would use a different top that would make the peach pie pop, like the topping on the Paper Bag Apple Pie in the original Der Dutchman Cookbook OR use the topping that is used in the Apple Oatmeal Crumble that is in Mrs. Miller’s Amish Cookbook! (Miller’s Home Cooking, R.R. 4, Millersburg, Ohio) 1973 edition.

Hi Dawn! No need to bake the pie crust beforehand, it will bake in the oven. Hope this helps!
