EUROPEAN-STYLE FERMENTING CROCKS DESCRIPTION
When the gutter around the rim is filled with water and the heavy lid placed on top, an air-tight seal forms to protect food from air and decay. (The gutter must be occasionally refilled as water evaporates.) These crocks can be kept in a cool place for months, letting the vegetables inside ferment naturally.

5-Liter Crock - Holds approx. 1-1/3 gallons; 12-1/2"H (w/ lid), 10-1/4"D, 9-1/4"OD, 5"ID, stones 2 lb, total wt 16 lb. Germany.

10-Liter - Holds approx. 2-3/5 gallons; 13-1/2"H (w/lid), 12"D, 11"OD, 5-7/8"ID, stones 3 lb, total wt 17-1/4 lb. Germany.

15-Liter Crock - Holds approx. 4 gallons; 16-1/4"H (w/ lid), 14"D, 10-3/4"OD, 6"ID, stones 2-3/4 lb, total wt 21-1/4 lb. Germany.

20-Liter Crock - Holds approx. 5-1/4 gallons; 16-3/4"H (w/ lid), 14-3/4"D, 12-1/4"OD, 6-7/8"ID, stones 4-1/4 lb, total wt 27-1/4 lb. Germany.

Note: Weight stones vary in color. Because German-made crocks are handmade, measurements may slightly vary. Also, there are often imperfections in the finish where the lighter tan of the ceramic shows through the dark brown glaze. These imperfections do not affect the performance.

"This is my first purchase with Lehman's and I know I will be shopping here in the future. This crock is a great value when comparing prices elsewhere and you can order without worrying too much about breakage in transit (we're in Reno,NV & Lehman's is in Kidron,OH-that's a lot of miles!) "I purchased two of these crocks. They really are great. I finally took a class on how to make sauerkraut and it worked the first try. The instructor said we would get yeast growing on the top. I had zero gunk on top. I think this is because of the crock's cover and the fact that you put water in the trough around the top of the lid and that keeps unwanted stuff out. I did open it a couple of times to push on the stones to get excess air out. The kraut tastes amazing. Very happy with this crock."

"I just finished my first batch of sauerkraut. It is delicious. My crock arrived with a broken lid, but customer service sent a new one promptly. The crock was easy to use. Overall I am satisfied with my purchase and would like to buy additional crocks in the future."

"Although this crock was extremely well packaged, it arrived with a hairline crack in it. I was new to crocking and was concerned the crack might separate over time. I called customer service and was told just to keep it and they promptly sent out a new one! I made kraut in the new one and also the cracked one with great results. Love these beautiful crocks and Lehman's customer service! Thanks."

"Just received my crock today via UPS. WOW! I was a little leary of paying so much for shipping, but now I understand. The crock was VERY well protected and arrived without a hitch. "This is the BEST Purchase I have made in a very long time! I have made saurkraut in my crock from Lehmans , 3 times!! All have turned out perfect! I liked it soo much I wanted my friend to have one so I purchased another! :) This crock is well worth the investment. The saurkraut,when finisherd comes out cleaner, that any other I have seen, an so easy to maintain during the fermentation process. the only thing you have to do is keep the well full of water! . "Thank you Will S. for incredible packing. The UPS man was even excited to see it. First batch is almost done, can't keep from "testing" it when filling water ledge, what freshness and crunch. Just push down on stones to keep covered.Our kraut recipe is from Root Cellaring 1979 Mike and Nancy Bubel book. Wonderful.Thank you again Lehmans."

"I purchased the 15 liter crock, and just love it!! There is no need to daily clear the scum off the top of the fermenting kraut (kahm). Just make sure the water in the lid grove is maintained and don't open for 2 weeks. Kraut, Kimchee whatever you ferment comes out perfect. I also recommend the Caldwell's Starter Culture. One thing I would like to see though is that the bricks that are placed on top of the kraut were glazed. If you make something like Kimchee the unglazed bricks pick up and hold that odor."

"This is the perfect crock I have found so far for making sauerkraut and kimchee. The lid is constructed so that there is a water barrier which prevents bugs from getting in (our usual problem making kim chee here in Hawaii)during fermentation."

"I had searched everywhere for a good crock and a good price. Lehmans is the place to buy. They are cheaper than amazon and other websites i checked out. My crock came quickly and was so carefully packed. I am excitedly waiting my first batch of Kraut and Am so happy with this crock. "I bought two and always have a batch of sauerkraut or sauerrubben in process. The water seal around the lid is excellent at keeping odors away. Cleaning is easy. And best of all, the kraut is so excellent my family and friends love it. These are wonderful crocks and worth the price! Thank you, Lehman's!"

"These crocks are wonderful especially for the price. They work perfectly returning to you perfectly fermented cabbage in about four weeks time. I love the lid system as it cuts down on maintenance of the sauerkraut. After using once I love it so much I bought 3 more in different sizes. The only thing that was a bit frustrating was the opening even on the 20L is to small to fit a med. lg. whole head through the opening to ferment whole heads so I had to take off about 3-4 layers of leaf for the head to fit through the opening. No big deal though, these crocks are worth getting."

"I got the 5L crock. This is my first purchase and use of a fermenting crock, so I do not have any hands-on basis for comparison. That being said, I found the crock to be exactly as described in the item listing and by previous reviewers: solid, some cosmetic flaws in the glaze, and robustly packaged for shipping. I have made one batch of kimchee in it so far, which turned out great. Unlike a previous reviewer, I did not find evaporation of water in the airlock to be a significant problem (potentially in an extremely hot and dry setting it could be) -- I assume that the grooves in the edge of the lid are to facilitate bubbling out of CO2, should it become vigorous during fermentation."

"Good price but I found the stone not heavy enough to compress the kraut. Also,the notches in the lid and the top seem unnecessary and require one to be more vigilant in adding water. I did have to sand the bottom of the vessel to smooth it out."

"I bought the 5L crock, and it has one major design flaw. The lid has holes that require the gutter rim to be completely full of water to get an air-tight seal. Even after one day of natural evaporation, the water level drops below the holes, allowing fruit flies and bugs to get into the crock and spoil the batch. I stopped using this crock because of that, and I would not purchase it again. If that one flaw were corrected, this would be a great crock."
