Recipe for Amazing Waffles
(By Jena Snyder Liggett from Lehman's Diamond Jubilee Cookbook)

  • 1 C. White Lily flour
  • 1 C. whole wheat flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 T. organic sugar
  • 2 eggs
  • 2 oz. melted salted butter
  • 2 C. buttermilk, room temp. (2 C. milk plus 2 T. lemon juice makes buttermilk; let sit 5 minutes to cure)

Whisk flour, soda, baking powder, salt and sugar in bowl. Beat eggs and melted butter; then add buttermilk. Add wet ingredients to dry ingredients; stir to combine. Let rest 5 minutes, then get cooking!

VARIATION: Can add fresh blueberries and/or pecan pieces to mixture. Amazing!
