I have owned this book for a number of years. I gave in and purchased it after taking it out of the library so often that I began to feel guilty! This book is filled with traditional methods of preservation that I was only vaguely familiar with--like preserving green beans by simply submerging in salted water and given time. No pressure canning. Yes, it works beautifully and the taste is far superior to fermented or pressure canned. I sometimes read local biographies about early everyday life in the US and am frustrated when putting up is mentioned but there are no details. Every family had their way and it was well known. But now these ways are all but lost and reconstructing those SAFE preservation techniques is a difficult task. I love this book. It's a fascinating read as well as informative. As my title says "Don't Hesitate" 1/2 * I would take a half star away if I could because the index is not stellar.

I loved the variety of storage options this book has to offer. Many of them are very simple. I learned in this book that blueberries contain everything they need to preserve themselves! Amazing.
