Ingredients

  • 1 cup quick oats
  • 1/2 cup whole wheat flour
  • 1 Tbsp salt
  • 2 Tbsp butter
  • 2 cups boiling water
  • 1 Tbsp dry yeast
  • 1/2 cup warm water
  • 5 cups white flour

Directions

  1. Combine quick oats, whole wheat flour, salt, and butter in a large bowl.
  2. Pour boiling water over the mixture and stir to combine.
  3. Dissolve yeast in warm water.
  4. When the oat mixture has cooled to lukewarm, add the yeast mixture.
  5. Stir in white flour.
  6. Mix until the dough is stiff enough to handle.
  7. Turn onto a lightly floured surface and knead for 5–10 minutes.
  8. Place in a greased bowl.
  9. Cover and let rise until doubled in size.
  10. Punch down and let rise again.
  11. Shape into dinner rolls and place in cast iron skillets, or form into loaves and place in 2 greased loaf pans.
  12. Bake at 350°F for 30–40 minutes, or until golden brown on top.
