Baking in a Wood Cookstove: Cinnamon Roll Recipe!

Our talented Lehman’s bakers, Amy and Eva, have done it again! This time, these two ladies worked together to bake some ooey, gooey, delicious cinnamon rolls in our Waterford Stanley Irish Wood Cookstove (a real beauty and a kitchen workhorse, too). Oh man, we can almost smell them now.

Ingredients

  • 3 Tbsp yeast
  • 1 cup warm water
  • 1 quart scalded milk
  • 1 cup butter
  • 2 cups mashed potatoes
  • 1 cup sugar
  • 6 cups flour
  • 2 eggs
  • 1 Tbsp salt
  • 11–12 cups flour
  • Melted butter (for cinnamon rolls or sticky buns)
  • Brown sugar (for cinnamon rolls or sticky buns)
  • Cinnamon (for cinnamon rolls or sticky buns)

Directions

  1. Dissolve yeast in warm water.
  2. In a large bowl, combine scalded milk, butter, mashed potatoes, and sugar.
  3. Let cool to lukewarm.
  4. Add 6 cups flour and mix well.
  5. Let stand for 20 minutes, until the mixture becomes foamy.
  6. Add eggs, salt, and 11–12 cups flour.
  7. Knead on a floured surface until smooth and elastic.
  8. Let rise until doubled in size.
  9. Punch down and shape as desired.
  10. For cinnamon rolls, roll out dough on a floured surface.
  11. Brush with melted butter.
  12. Sprinkle with brown sugar and cinnamon.
  13. Roll up and place in greased pans.
  14. Let rise a second time.
  15. Bake at 400°F for 15–20 minutes, or until golden brown.
  16. For sticky buns, form dough into 1-inch balls.
  17. Dip each ball in melted butter.
  18. Roll in brown sugar and cinnamon.
  19. Place in a greased pan with dough balls touching.
  20. Let rise a second time.
  21. Bake at 400°F for 15–20 minutes, or until golden brown.
