Ingredients

  • 2 C. oatmeal
  • 2 eggs
  • 1/2 C. whole wheat flour
  • 1 tsp. baking soda
  • 2 C. buttermilk or plain yogurt
  • 1/4 C. oil
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • Fresh-caught perch or walleye fillets
  • Flour
  • Cooking oil
  • Salt and pepper
  • 1 to 1-1/2 lbs ground beef
  • Salt and pepper
  • 2 C. elbow macaroni
  • 3/4 C. water
  • 1 small onion, chopped
  • 2 tsp. chopped garlic
  • 1–26 to 32 oz. can spaghetti sauce
  • 2 C. shredded Cheddar cheese
  • 1 box yellow cake mix (plus the ingredients needed to make it)
  • 1–20 oz. can pineapple slices
  • Maraschino cherries
  • 1 C. brown sugar
  • 1 1/2 C. pineapple juice and water mix
  • 1/2 C. butter

Directions

  1. The night before, mix oatmeal and buttermilk in a bowl. Cover and refrigerate.
  2. In the morning, add the eggs and oil and mix thoroughly. Sift flour, baking powder, baking soda and cinnamon into the oatmeal batter. You can add chopped seasonal fruit or chocolate chips, as well.
  3. Spray a griddle with an oil spray and heat over medium heat. Fry the pancakes on the griddle, turning once. Any leftovers can be toasted for future breakfasts.
  4. Cut fresh-caught fish fillets to fit in pan. Roll fillets in flour. Salt and pepper lightly.
  5. Heat about 1 1/2″ of oil in cast iron chicken fryer over campfire. When oil just begins to smoke, drop in fillets, turning until golden brown, 3 to 5 minutes, depending on size of fillets. Enjoy the best fish fry ever.
  6. Brown hamburger with onions, salt, pepper and garlic in iron skillet on stove top.
  7. Add macaroni, spaghetti sauce and water. Cover and cook over medium heat until macaroni is tender, about 15 minutes, stirring often.
  8. When tender, turn off stove and stir in 1-1/2 cups of cheese. Sprinkle remaining 1/2 cup on top and cover with lid for 5 minutes to melt.
  9. Melt butter in a Dutch oven. Add sugar, then pineapple, placing a cherry in the center and in any gap between pineapple slices.
  10. Make the cake mix as directed and pour over pineapple. Cover Dutch oven and bake using 10 to 12 briquettes on the bottom and 14 to 16 of the briquettes on top for 45 minutes or until top of cake springs back when touched.
  11. Remove oven from heat and let cool with top off.
  12. To remove cake, cut around sides and insert a paper plate, then flip the oven, allowing the cake to slide out onto the paper plate.
