If you love your cast iron cookware as much as we do, then you might already know the yumminess that can come from a cast iron pan.  Cast iron holds heat incredibly well, cooks food evenly, and has a natural non-stick surface.

Ingredients

  • 4 T. softened butter
  • 1/3 C. white sugar
  • 1/3 C. light brown sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • Pinch of salt
  • 1 1/2 C. all-purpose flour
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2/3 C. buttermilk
  • 1 C. light brown sugar
  • 3 T. softened butter
  • 2 T. honey
  • 2 T. light Karo syrup
  • 1 C. pecan halves

Directions

  1. Heat oven to 350°F. Spray a skillet with cooking spray.
  2. Beat the butter until creamy. Add the sugars and beat until fluffy. Add the eggs and vanilla and mix until blended.
  3. In a small bowl, combine the flour, cinnamon, baking powder, baking soda, and a pinch of salt.
  4. Using a mixer on low speed, gradually mix the flour mixture with the buttermilk, adding a little at a time.
  5. In a separate pan, melt all topping ingredients except the pecans, stirring to prevent burning.
  6. Once melted, pour the mixture into the prepared skillet and spread the pecans evenly over it.
  7. Pour the cake batter over the pecans.
  8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool on a wire rack for 10–12 minutes.
  10. Invert onto a serving plate and pour any remaining caramel over the top.
