“I developed this recipe while trying to add more whole grains to our diet. My husband Rocky and I found most quinoa dishes were bland. So, I took the Southwest flavors we liked and came up with this dish. It has become a favorite!”

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tsp. Salt
  • 1 10 oz. Can Rotel Mild Tomatoes with green chilis
  • 1/2 cup Pace Mild Picante Sauce
  • 1 cup frozen corn
  • 1 15 oz. Can Black Beans rinsed and drained
  • 1 cup Cheddar Cheese
  • Smoked sausage, ground beef, chicken, or protein of your choice
  • 1 green bell pepper
  • 1 tbs of cilantro
  • 2 tbs of sour cream
  • Corn Chips
  • Avocado
  • Jalapeño

Directions

  1. In a medium saucepan, bring the vegetable broth and salt to a boil.
  2. Rinse the quinoa thoroughly, remove the bitter coating and add to broth.
  3. Cook 15 minutes, or until tender.
  4. Add the remainder of ingredients, stirring until heated through.
  5. Serve with the garnishes of your choice.
