Growing up I never realized just how lucky I was to have been blessed with both sets of grandparents, but also two great-great grandmothers. When you are young, you seem to take for granted those around you until later in life when you can no longer hear their voices or see their smiles, then suddenly you realize just how important they were to you.

Ingredients

  • 1 1/3 cup of butter (softened)
  • 1 1/2 cup sugar
  • 4–5 eggs room temperature (small – 5, large- 4); Separate egg yolks and whites.
  • 1 teaspoon vanilla
  • 1 1/2 cup cake flour
  • 3 tsp. baking powder
  • A pinch of salt
  • 30 graham cracker sheets – (make into crumbs)
  • 1 cup of chopped walnuts
  • 1 1/2 cup of milk
  • 1 bar of German Chocolate baking chocolate
  • 2 sticks of butter (1/2 #)
  • 3 cups of powdered sugar
  • 1 egg (*optional)
  • 1 tsp. vanilla

Directions

  1. STEP 1: Cake prep
  2. Preheat the oven to 350°F. Grease three 9-inch cake pans. Line with parchment rounds if desired.
  3. Sift together the dry ingredients: cake flour, baking powder, and salt.
  4. Crush the graham crackers and grind the nuts.
  5. Separate the eggs into yolks and whites. Beat the egg whites until stiff peaks form.
  6. STEP 2: Make the batter
  7. Cream the butter and sugar together.
  8. Add the egg yolks and vanilla, continuing to beat.
  9. Gradually add the dry ingredients while mixing.
  10. Mix in the graham cracker crumbs and chopped nuts, alternating with the 1½ cups milk.
  11. Gently fold in the beaten egg whites.
  12. Divide the batter evenly among the three prepared cake pans.
  13. STEP 3: Bake
  14. Bake at 350°F for 20–25 minutes, or until lightly browned and a toothpick comes out clean.
  15. Remove from the oven and cool in the pans on a wire rack.
  16. STEP 4: Frosting
  17. Melt the German chocolate bar over a double boiler. Remove from heat and let it cool slightly.
  18. In a bowl, beat the softened butter and sugar until creamy.
  19. Add the egg and vanilla, then mix well.
  20. Add the cooled melted chocolate.
  21. Gradually add powdered sugar, 1 cup at a time, until the frosting is smooth and spreadable.
  22. STEP 5: Assemble the cake
  23. Run a knife around the edges of each cooled cake layer to release them from the pans.
  24. Place the first layer on a cake plate and spread frosting on top.
  25. Add the second layer and repeat with frosting.
  26. Top with the final layer and frost the top and sides until fully covered.
