Chocolate Chip Muffins? Yes, Please!

National Chocolate Chip Day was May 15, but who really needs an excuse (or a specific day or time) to enjoy a delicious batch of chocolate chip muffins at Lehman’s? Our entire office enjoyed these sweet treats.

Oatmeal Chocolate Chip Muffins

Oatmeal Chocolate Chip Muffins

Ingredients

  • 1 1/4 C. quick rolled oats
  • 1 1/4 C. milk
  • 1 egg
  • 1/2 C. canola oil
  • 3/4 C. brown sugar
  • 3/4 C. chocolate chips
  • 1 C. pecans
  • 1 1/4 C. flour
  • 4 tsp . baking powder
  • 1 tsp . salt

Instructions

  1. Combine oats and milk
  2. allow to stand 15 minutes. Preheat oven to 400 degrees Fahrenheit. Stir egg, oil, 1/2 cup brown sugar, chocolate chips, 1/2 cup pecans into oat mixture.
  3. In a large bowl, combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring just until all dry ingredients are moist.
  4. Fill lightly greased muffin tins 2/3 full and sprinkle with remaining brown sugar and pecans. Bake 20 to 25 minutes.
