Christmas Cookie Recipes: Butterscotch Roll Cookies

Adding a variety of cookies to your holiday baking gives your loved ones an array of sweet choices. Try this classic recipe for butterscotch cookies. (Helpful Hint: Just make sure you leave time for the dough to chill!)

Butterscotch Roll Cookies

Ingredients

  • 3 C. brown sugar

  • 3 C. white sugar

  • 4 eggs

  • 1 lb. shortening

  • 1 tsp. salt

  • 12 C. flour

  • 4 tsp. baking powder

  • 3 tsp. soda dissolved in 1 C. warm water

  • 1 T. vanilla

Instructions

  1. Cream shortening, sugar, eggs, and salt in a large bowl.

  2. Add dry ingredients alternately with water.

  3. Beat until stiff enough to work into flour.

  4. Roll by hand into logs.

  5. Wrap logs in waxed paper or foil.

  6. Chill.

  7. Slice into 1/4-inch slices.

  8. Bake at 400°F for about 10 minutes.
