Credit: Recipe by Pam Smith “I developed this recipe while trying to add more whole grains to our diet. My husband Rocky and I found most quinoa dishes were bland. So, I took the Southwest flavors we liked and came up with this dish. It has become a favorite!”

How to Make Southwest Quinoa

Available at Lehmans.com[/caption] 1. In a medium saucepan, bring the vegetable broth and salt to a boil. 2. Rinse the quinoa thoroughly, remove the bitter coating and add to broth. 3. Cook 15 minutes, or until tender. 4. Add the remainder of ingredients, stirring until heated through. 5. Serve with the garnishes of your choice. This recipe was filling and delicious! I used sliced smoked sausage. Sour cream and cilantro in mine for my dinner and it was the perfect blend of spices. You can really customize this dish anyway you want. Get creative and think of staples you and your family love. My family and I will definitely be making this in the future. [tasty-recipe id="42486"]
