Ingredients

  • 6 medium apples
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 3/4 cup pecans, chopped
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • 2 tablespoons maple syrup

Directions

  1. Preheat oven to 350°F.
  2. Cut the tops off the apples and scoop out the cores with a spoon. Place apples upright in the baking dish.
  3. In a bowl, whisk together the pumpkin puree, maple syrup, vanilla, cinnamon, and pumpkin pie spice until smooth.
  4. In a separate bowl, mix the pecans, cinnamon, butter, and maple syrup with a fork until crumbly.
  5. Spoon the pumpkin filling into the apples, then top each with the pecan mixture.
  6. Bake for 30–45 minutes, or until the apples are softened and the filling is set.
  7. Let cool for 10 minutes before serving.
