We’re excited to introduce our brand new cookbook, Lehman’s Sapphire Cookbook Collection, in honor of our upcoming 65th anniversary.

So that you can celebrate the simpler life by cooking with family and friends, we have compiled over 650 recipes in honor of you, our customer, and your loyalty for over six and a half decades. Our customers, our employees and our relatives have all contributed to this curated collection of yum!

With sections featuring appetizers, beverages and dips; soups and salads; bread and breakfasts; vegetable and side dishes; main dishes, desserts and candy, you are sure to find something delish to serve your family and friends.

Feel Good Soup (aka Broccoli and Cheese Soup)

Looking at the recipe, one might think it is just a simple Broccoli and Cheese soup; however, to our children it is so much more. My parents watch our girls, Brooklyn (7) and Addison (6) while we are at work – they have since birth so it is quite the blessing.

One day a few years ago, neither girl was feeling the greatest. My mom told them she’d make them some special soup. She whipped up a batch of her homemade Broccoli and Cheese Soup and after the girls ate it they felt better. We never thought anything of it until Addison was sick one day and asked for “Feel Good Soup.” I had no idea what she was talking about so I asked her to describe it. She said it was the soup the Grammie made her when she was sick; it made her feel better and she wanted it again.Sue's daughters

Since that day, the girls often ask for “Feel Good Soup” – whether they aren’t feeling well or just need a pick me up. In our family, it’s not “Broccoli and Cheese Soup”, it is “Feel Good Soup” and to my girls it is more than a food, it’s like a warm hug from Grandma (Marilyn Link, mother of Customer Service Manager Sue Bukovitz).

Feel Good Soup (Broccoli and Cheese Soup)

Feel Good Soup (Broccoli and Cheese Soup)

Ingredients

  • 1/4 cup chopped onion
  • 1 T butter
  • 1 – 1/2 C. water
  • 2 chicken bouillon cubes
  • 1 bag broccoli cuts
  • 6 oz . fine noodles
  • 1 – 1/2 C. milk
  • 1/2 pound Velveeta cheese, cubed

Instructions

  1. Cook noodles according to package directions. In another pot, oil onions, broccoli and bouillon cubes. Cook until tender. Drain noodles and add to mixture. Stir in milk and then cheese cubes. Cook until cheese is melted, stirring frequently.
