Ingredients

  • 1 C. flour
  • 1/2 C. quick oats
  • 1/2 C. brown sugar
  • 1/2 C. butter
  • 2 C. pumpkin
  • 3/4 C. buttermilk
  • 2 eggs
  • 3/4 C. sugar
  • Pinch of salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1/2 C. brown sugar
  • 2 T. butter
  • 1/2 C. chopped nuts

Directions

  1. Combine crust ingredients in a mixing bowl and mix until crumbly.
  2. Press into a greased 9 x 13-inch pan.
  3. Bake at 350°F for 15 minutes.
  4. Combine filling ingredients and beat well.
  5. Pour over baked crust.
  6. Bake at 350°F for 20 minutes.
  7. Combine the next 3 ingredients and sprinkle over pumpkin bars.
  8. Return to oven and bake at 350°F for 20 minutes, or until set.
  9. Serve at room temperature.
