Direct Set Starters (D)-Direct set starters are easier to use than any other method - need no incubation but can be used only once. Each packet contains 5 sealed envelopes, enough to make about 10-15 lbs of cheese.
Regular Set Starters (R)-Regular starters come in single packs, require incubation but can be reused indefinitely.
Starters come with brief instructions, but no detailed recipes. See our Books section for "How-to" books and video.
Note: Starters must be kept in the freezer if storing them for more than a couple months.

Mesophilic Starters are used for hard cheeses like cheddar, Colby, Gouda, feta.
Thermophilic Starters are used for Swiss, Romano, Parmesan.
Sour Cream Culture turns a pint of cream into thick sour cream.

Citric Acid is used for making Mozzarella, Ricotta and other soft cheeses. Can also be used for soapmaking to lower pH level (for a gentler soap). 8 oz packet.

Coarse Cheesecloth is used for hard cheeses. 60 threads per in.
