Treat yourself to a hearty helping of buttered noodles or a steaming bowl of chicken noodle soup on a cold, blustery day. Our homemade noodles will make all your favorite recipes taste better. Old-fashioned noodles take a little longer to cook (15 minutes) but are worth the wait.

The kitchen and factory of this local, family-owned business was personally inspected by the Lehman family. Our impression? Sparkling clean! Their "secret family recipe" may be Amish, but the best equipment in the world is Italian, and that's what they use. The recipe itself is over 40 years old, and it's thicker and heartier than other noodles. The wheat noodles are made from hard winter durum wheat, not lower-grade semolina.

Other company policies include using the absolute freshest ingredients, including locally grown eggs; and a scientifically controlled drying process, which they describe as the "secret of a good noodle."

Wide noodles are ½" wide, and extra wide noodles are 1" wide.

Note: These two old-time recipes were submitted by Evelyn P., a Lehman's customer from Missouri. Enjoy!

Noodle Pudding
Serves 9

7 1/2 cups uncooked wide egg noodles
1 pkg (8 oz) cream cheese, softened
6 T. butter, softened
1/2 c. sugar
3 eggs
1 c. milk
1 c. apricot nectar

1 c. cornflake crumbs
1/2 c. sugar
6 T. butter, melted
1/2 t. ground cinnamon

Preheat oven to 350 degrees F. On stove top, cook noodles according to package instructions. Meanwhile, in a large mixing bowl, beat the cream cheese, butter and sugar. Beat in eggs. Gradually stir in milk and apricot nectar.

Drain noodles and return to the pan. Add cream cheese mixture and toss to coat. Transfer to a 9"x13" baking dish.

In a small bowl, combine the topping ingredients and sprinkle over noodles.

Bake, uncovered, at 350 for 20-30 minutes or until a thermometer reads 160. Serve warm.

Cheesy Noodle Casserole
Serves 6-8

16 oz egg noodles, cooked
1 (16 oz) carton cottage cheese
1 (10 3/4 oz) can condensed cheddar cheese soup
1 c. half and half
1 (8 oz) pkg cream cheese
1 c. shredded cheddar cheese
2 T. butter
1/2 c. shredded Parmesan cheese
3/4 c. crushed salad croutons or panko bread crumbs
salt and pepper

Preheat oven to 375 degrees F. Combine noodles and cottage cheese in a 9"x13" pan and set aside. In a separate pan, heat the next 5 ingredients (soup, half and half, cream cheese, cheddar cheese and butter). Season to taste with salt and pepper. Pour this mixture over noodle/cottage cheese mixture and stir gently to combine. Sprinkle Parmesan cheese and crushed croutons on top. Bake, uncovered, at 375 until top is golden (about 12-15 min). Noodles should be bubbly.

"These are best noodles ever used them in fresh neck bones they don't get starchie or mushy you will enjoy will fine many things to use them in."

"Bought a case. Gifted 2 bags, cooked one over time and finally got to fourth sealed bag. Hundreds of maggots and worms throughout. Called Lehmans and they promptly, at their insistence, sent another case gratis. Looked them over carefully, I thought, and seeing no apparent inomillies again gifted two bags, cooked the one and finally dug into bag four where lo and behold worms were evident. No where near the extent of the previous infestation but definitely worms were present on the noodles. Emailed Lehmans this time saying I did not want any replacement noodles as the thought made me sick. The response I got was "you got six usable bags (haven't had the courage to ask my gift receivers if worms were present) so we are not sending any replacements,(again asked for nothing except maybe for them to reinspect their supplier - we have a problem Houston) and they would watch supplier to see if other complaints came in". Selling an inedible product and they're are going to watch it? Needless to say I'm no longer a customer of Lehman's. I'm bound and determined to contact the noodle manufacturer and pursue it further with local health officials. "

Lehman's Responds:

We are very sorry for the problems you experienced. We've sold 1000's of bags of these noodles, and we have never encountered this type of problem before. Of course, we will replace or refund the noodles any time it happens. (Please supply your lot number from the label, which we will use to help guarantee food safety, when requesting a replacement.) Galen Lehman, the owner, personally inspected the bakery where our noodles are made. It is a very high quality operation that is inspected and re-approved regularly by stringent government inspectors. Every batch of noodles is sanitized by being heated to 150 degrees for four hours before being sealed into clean plastic bags. However, infestations may still occur through microscopic holes in the plastic bags, if stored in very warm surroundings.

"I have gotten tired of store brand "wide" egg noodles. Prepared these with a "Chicken Stock" and left over turkey from Thanksgiving. Closest I've come to my Grandmother's homemade. "

"Believe me, these extra wide noodles are wide! The box full of 2.5 lb. bags will last us quite awhile. I decided to invest in these noodles after getting sick of the blah mushy ones at my big box grocery. We approve of the difference!"

"I was a skeptic but now I am a believer. These really are the best! I've tried them plain, with butter and several different sauces/gravies. I even like to crunch on one now and then! I will never go back to tasteless cardboard grocery store brands again. My son who doesn't like any kind of noodle will even eat these without complaining! "
